“Sharing Japanese Food Culture with the World”
It is a pleasure to meet you all.
My name is Toshiyuki Ariga.
I am honored to have been appointed as a “Top Star” for the general incorporated association World Top Beauty.
I left my corporate job to enter the culinary world at the age of 21.
Before I knew it, nearly 30 years had passed since I first learned how to hold a kitchen knife.
My journey has taken me to Omihachiman (Shiga Prefecture), Kitashinchi (Osaka), Toba and Ise (Mie Prefecture), and finally, Kumamoto.
In each of these places, I met mentors and colleagues, and immersed myself in various facets of Japanese cuisine.
Even within the single category of “Japanese cuisine,”
ingredients change with the region,
the dishes required change with the establishment,
and the way a dish is conveyed changes with the people involved.
The accumulation of these individual experiences forms the foundation of the cooking I do today.
Currently, I serve as the owner and head chef of the Japanese restaurant “Hinokuni Hanare” in Kumamoto. It has been about a year and a half since I opened the restaurant.
Unlike the days when I focused solely on cooking, running a restaurant, welcoming guests, and taking full responsibility for my dishes has given me a renewed appreciation for the profound depth of the culinary arts.
Although I have been at this for 30 years,
I don’t feel so much like I’ve “done this for 30 years,” but rather that “it took 30 years for my own cooking to truly begin.”
While I cherish the skills and experience I have cultivated, I have no intention of being bound by outdated notions of how things “ought to be.”
Cuisine, restaurants, and people all evolve with the times.
That is why I intend to preserve what must be preserved, while fearlessly changing what needs to be changed.
Moving forward, I want to do more than just cook; I want to meet new people through food, create new value, and pass on the precious connections I have received to the next person. I look forward to the new encounters here giving rise to something
I never could have conceived of on my own.
I am still very much in the midst of my journey as a chef.
Rather than resting on the laurels of the past thirty years,
I intend to use that experience as a foundation to make the coming ten or twenty years truly exciting.
With that mindset, I am taking this new step forward.
I look forward to your support.
